Maturation

The grape bunches are initially aerated naturally for several days to concentrate the aromas and improve the quality. Fermentation and maceration take place at a low temperature, which, together with daily remontages (pumping the must over the mash) and delestages (draining the must and transferring it over the mash), ensures a gentle extraction of aromas and tannins.
The malolactic fermentation then takes place in small steel tanks, which reduces the wine's acidity and makes it softer. The wine then matures for about 15 months in French barriques and amphorae. These different vessels help to give the wine additional character, complexity and a balanced structure.
