MaturationThe grape bunches are first naturally aerated for several days to concentrate the aromas and improve quality. Fermentation and maceration take place at low temperature, which, together with daily pump-overs (circulating the must over the cap) and délestage (drawing off the must and returning it over the cap), ensures a gentle extraction of aromas and tannins.
Malolactic fermentation then takes place in small steel tanks, reducing the wine's acidity and making it softer. The wine then ages for about 15 months in French barriques and amphorae. These different vessels help to give the wine additional character, complexity and a balanced structure.
