MaturationIn this maturation process, the wine is vinified in stainless steel containers. Intensive methods such as frequent pump-overs and délestage are applied in order to mix the must optimally with the grape skins. These procedures promote the extraction of colour and aromas.
After fermentation, an extended maceration on the skins takes place to further strengthen the aromas and the structure of the wine. In the final phase of fermentation, slightly higher temperatures are used to improve the extraction of flavonols and polyphenols. These are important for the colour intensity and the antioxidant properties of the wine. This approach results in a complex, full-bodied wine with intense flavour notes.
