This wine is crafted with the utmost care and dedication to unlock its finest nuances and aromas. The grapes are hand-picked and carefully placed in selected 15 kg crates to preserve their freshness and quality from harvest to processing. Each grape varietal thrives in specific parcels and is vinified separately with the utmost precision to reveal its unique character. Once the grapes are destemmed, a controlled maceration phase begins in stainless steel tanks, allowing for the careful and comprehensive extraction of essences and colors. This phase, accompanied by an alcoholic fermentation lasting up to two weeks, lays the foundation for the wine's depth and body. Subsequently, malolactic fermentation refines the flavor profile, lending it a silky smoothness. The wine then matures conscientiously for over 16 months in selected oak barrels and barriques of varying sizes (35-50 hl), developing an impressive complexity. Through aging and the harmonious blending of individual batches, a masterfully balanced cuvée is created, nearing its completion. After another six months of bottle aging, the wine delights with a perfectly balanced structure, intensely expressed aromas, and an elegant, long-lasting finish.

The wine's bouquet presents itself as a captivating symphony of intense and inviting aromas, transporting the enthusiast into a sensual world full of rich and diverse impressions. The deep, velvety note of black cherries takes center stage, caressing the nose and conveying a sense of fullness. This fruity abundance is complemented by the sweet darkness of ripe plums. Added to this is the freshness of wild berries, reminiscent of a sunny walk through a summer forest, lending lightness and vibrancy to the aroma. Amidst these fruity accents unfolds a playfully seductive complexity, accentuated by spicy bay leaves. These introduce a herbaceous, slightly tart note that adds structure and depth to the aroma. At the same time, a subtle vanilla caresses the palate, bringing with it a warm, comforting sweetness, and together with a delicate hint of strawberry and cream candies, strikes a harmonious balance. This delicate touch of creamy sweetness rounds off the bouquet, creating an extremely appealing and long-lasting aromatic experience.

| Taste |
The wine is characterized by a subtle dryness that envelops the palate right from the start, revealing the rich, multi-layered character of the wine. In an artful balance, the fruity notes of juicy, fully ripe cherries are revealed first. These give the wine an invigoratingly sweet aroma, which is complemented by the lively acidity of intense black currants. As the fruity nuances unfold, a gentle spiciness comes to the fore: a delicate hint of black pepper enhances the complexity and gives the wine a slightly piquant dimension. This spicy element blends seamlessly into the overall composition without disturbing the finely tuned harmony of the aromas. The final accent of the taste journey is set by the tempting darkness of dark chocolate. This nuance brings a bittersweet depth to the aroma profile, a component that adds structure and refinement to the overall taste. The combination of these different elements – the freshness and fruitiness of the cherries and currants, the fine spice of the pepper, and the velvety darkness of the chocolate – results in a full-bodied, lasting taste experience. This elegantly merges into a long, lingering finish that pampers the palate and captivates the senses in the most pleasant way.

| Serving suggestion |
This wine pairs excellently with a variety of dishes, enhancing and complementing its rich, nuanced aromas. Begin the culinary experience with an appetizer platter featuring a fine selection of salami and ham specialties. These savory meat flavors harmonize wonderfully with the wine's fruit and spice. For the main course, a pasta specialty with truffles and freshly grated Parmesan cheese is an excellent choice. The earthy, intensely aromatic notes of the truffles perfectly complement the wine's spiciness and fruitiness, while the creamy Parmesan gently envelops the palate and enhances the balance of flavors. A hearty venison stew, braised in a red wine reduction, could also be the ideal accompaniment to this wine. The complex, gamey note of the venison finds excellent correspondence in the wine's complexity, making it a culinary highlight. For festivities or a special occasion, this wine is recommended with classic roast variations, whether lamb, beef, or pork, each harmoniously finished with herbs and spices. The menu is rounded off with a selection of medium-aged and mature cheeses. The wine is able to impressively showcase both the finer nuances of the cheeses and their full-bodied flavor, guaranteeing an unparalleled conclusion to the palate experience.
