Maturation

Following a thorough quality control of the grapes, a 20-day maceration takes place at controlled temperatures between 28 and 30°C. During this time, gentle extraction and regular pumping over ensure that color, aromas and tannins are optimally extracted from the grape skins. After maceration, the wine matures for 12 months in new French barriques and tonneaux. This careful maturation gives the wine a distinctive structure, fine roasted aromas and a remarkably high quality. This process represents a significant innovation in the wine's aging process and contributes significantly to its complexity and excellence.
