Initially, the freshly pressed must undergoes fermentation in temperature-controlled stainless steel tanks. The wine remains on the lees in these barrels for at least six months, which not only adds additional aromas but also enriches its texture. As the spring of the following year approaches, the young vintage wine is assembled into a cuvée, forming the basis for further aging. This is followed by bottle fermentation, a second and particularly important fermentation phase that takes place in the wine bottle and gives the wine its characteristic effervescence and fine perlage. During this bottle aging, the wine remains on the lees for at least five years, allowing it to develop remarkable complexity and profound flavor nuances. Finally, the yeast sediment is removed from the bottle during disgorgement, a critical process that requires careful precision to maintain the wine's purity and quality. After disgorgement, the wine rests in the bottle for another six months, a period necessary to give it its final polish.
