Maturation	The production process of a sparkling wine involves several important phases. First, alcoholic fermentation takes place in stainless steel tanks, which usually ensures a controlled environment to preserve the purity and freshness of the aromas. After the first fermentation, a cuvée is created by adding 20% reserve wines. The reserves offer consistent quality by compensating for vintage variations and increasing complexity. The blend often consists of Chardonnay and Pinot Nero (also known as Pinot Noir), which are common grape varieties in sparkling wine production. The second fermentation in the bottle leads to the formation of fine bubbles. This fermentation in the bottle with yeast ensures that the wine obtains a fine mousse while developing complex aromas. A crucial step is aging in contact with the yeast for at least 24 months. This long aging period leads to a refinement of the sensory properties of the wine by intensifying bread and yeast notes and developing a creamy texture. After removing the yeast by disgorging, the wine is stored for another two months to achieve a harmonious and balanced taste profile before it is ready for sale. Guido Berlucchi is a renowned winery in Franciacorta, which was named "Winery of the Year 2022" by Gambero Rosso. It has played an important role in establishing the classic Italian method. Franco Ziliani and Guido Berlucchi created the first Franciacorta sparkling wine in the region back in 1961. The best way to store the wines is in a cool, dark place, horizontally. When storing, the temperature should not exceed 16 degrees.
