The Criseo from "Campo Bianco" is produced with great care and in accordance with traditional methods. The grapes are harvested in a single pass to ensure that all the fruit is at the peak of ripeness, thus offering the best aromas and flavors. This harvest takes place in the cool morning hours, which helps to preserve the freshness of the grapes and exploit the full potential of the vintage. After harvesting, co-fermentation follows, a traditional process in which all the grapes are fermented together. This process allows a harmonious connection of the different grape varieties and ensures a balanced and characterful wine. Fermentation takes place under controlled conditions to preserve the natural aromas and structure of the wine. After fermentation is complete, the wine is initially stored in stainless steel tanks for one year. This storage in stainless steel tanks helps to maintain the wine's freshness and clarity. This is followed by one year of aging in the bottle. This aging period is crucial as it allows the wine's aromas to harmonize and develop further, allowing the wine to achieve deeper complexity and a finer balance. Throughout the entire production, the main focus is on preserving the natural characteristics of the wine, ensuring that both the grape variety and the terroir are clearly expressed when drinking.
