Maturation

The wine was developed using a careful and precise method. After destemming and gently crushing the grapes, each grape variety was vinified separately. This approach allows for precise control over the development of aromas and structure. Fermentation and maceration were carried out in stainless steel tanks at controlled temperatures of no more than 28° C and lasted for about 15-20 days. This control helps to maintain the intensity of the aromas and promote a balanced structure. After the first fermentation phase, half of the wine was transferred to used 225-liter French oak barrels. Here, malolactic fermentation took place, which is crucial in softening the acidity in the wine and giving it additional complexity and smoothness. The wine was also refined in these oak barrels, harmonizing the aromas further. The other half of the wine matured in stainless steel tanks, which preserves the freshness and fruit notes. At the end of the aging process, both portions were combined before the wine was bottled. The aging method ensures an impressive balance between fruitiness, acidity and woody nuances, which gives the wine elegance and versatility.
