Maturation

This wine has been crafted with great care and expertise to fully express its unique characteristics. The production process began with fermentation and maceration, carried out in temperature-controlled steel tanks over a period of approximately 15 to 20 days. The precise control of the temperature, which never exceeded 28°C, aimed to achieve an optimal balance between the extraction of aromas, tannins, and colorants. This method ensures that the wine retains its freshness and vibrant fruit aromas. After fermentation, the wine was stored in the same steel tanks for a further 24 months. This type of aging helps to preserve the purity of the fruit as well as the varietal characteristics. The absence of wood influence gives the wine a clear and unadulterated expression of its original grape varietal characteristics. Steel tanks are ideal for grape varieties whose natural aromas and acidity are to be particularly emphasized. Before being released on the market, the wine underwent an additional aging process in the bottle, which lasted six months. This bottle aging is crucial to harmoniously unite the various aromas and components of the wine. Through this additional resting period, the wine develops a balanced structure and gains in complexity, ultimately leading to a well-rounded and refined taste experience as soon as the wine is opened. The decision to mature the wine exclusively in steel tanks underscores the intention to present a clear, fresh, fruity wine that reflects its origins and character in an unadulterated way. This makes it not only an exceptional choice for connoisseurs who appreciate the pure expressions of the grape, but also an ideal accompaniment to a variety of dishes that can complement its vibrant freshness.

Scent

The aroma of this wine is a true feast for the senses, unfolding with impressive depth and complexity. Initially, the rich, fruity notes of ripe black currants and juicy, dark cherries are most present, accompanied by the freshness of sweet raspberries. This fruitiness is harmoniously complemented by tart blackberry notes, which add another dimension to the aroma. With a gentle swirl in the glass, elegant hints of finely ground black pepper rise, lending an inviting spiciness to the aroma. These are underscored by subtle hints of aromatic herbs, which lend the ensemble fine floral undertones. Deeper notes emerge as the elegance of cedarwood comes to the fore, giving the aroma its structure and complexity. This woody base is framed by a touch of vanilla, which brings with it a gentle sweetness and creaminess, as well as slightly smoky notes reminiscent of fine leather and dark tobacco. The aroma concludes with a mineral freshness reminiscent of wet earth and graphite, while fine nuances of cocoa and a hint of coffee complete the experience. This complexity and multi-layeredness gives the bouquet an appealing depth that awakens curiosity and makes you want to take the first sip.

Taste

The taste of this wine has a fascinating balance that immediately catches the eye. On the first sip, a lively juiciness unfolds, reflecting the fruit aromas of the bouquet and at the same time complemented by a dryness that gives the wine its structure.
On the palate, one notices a velvety texture, which is supported by a well-integrated tannin. This tannin feels initially coating and gives the wine a solid base that gives depth to the fruit layers. The tannins are present without being overwhelming, and offer an appealing tannin structure that balances the overall impression of the wine.
The finish can be described as rather short, but concludes with an elegant and clean finish that leaves a ultimately restrained impression. Here, subtle notes appear that correspond to the mineral freshness of the bouquet and contribute to a certain lightness in the finale. This characteristic finish ensures that the wine appears refreshing and harmonious, even if it is not particularly long-lasting in taste by nature. Overall, the wine presents itself with a taste that is both juicy and lively, and has a fine structure that is underlined by its dryness and the velvety tannins.

Serving suggestion

This wine is an excellent accompaniment to a variety of dishes. It harmonizes wonderfully with appetizers featuring salami and ham variations, as its dry structure complements the spicy-salty notes of the cured meats. It particularly unfolds its qualities with pasta dishes, such as with a tomato-based or meaty Bolognese sauce. It can also be well combined with various roasts, whether pork, beef, or lamb, as its tannins pick up the savory aromas. Finally, it also goes excellently with medium-aged and mature cheeses such as Manchego or Comté, where its smoothness underpins the nutty and full-bodied aromas of the cheese. These combinations highlight the aromas of the wine and offer an all-around harmonious taste experience.
