The winemaking process focuses particularly on care and quality at every stage of production. The grapes are harvested by hand, allowing for the selection of the best fruits, and then thoroughly examined on a double sorting table to ensure the highest quality.
After harvesting, the grapes are transported to the fermentation tanks using gravity to avoid damage. The individual grape varieties are vinified separately. This approach preserves the characteristic aromas and individuality of each variety. The fermentation and maceration process takes place in a controlled manner in steel tanks over a period of 20 to 25 days, with the temperature carefully regulated to a maximum of 28°C to preserve the freshness and fruity notes of the grapes. After malolactic fermentation, which gives the wine a pleasant smoothness, the wine matures. For maturation, 80% of the wine is aged in 500-liter tonneaux made of French and Austrian oak, while the remaining 20% is aged in smaller 225-liter barrels made of French oak. These oak barrels contribute to the development of complexity, depth and a harmonious taste profile. The final touches are made in the bottle, where the wine continues to rest before it can finally be enjoyed. This gives the wine the opportunity to fully develop its character. This careful and well-planned aging process results in an elegant, balanced wine with complex aromas that will delight wine lovers.
