MaturationThe wine is matured with the utmost care and without the use of pumps. Instead, the whole berries are gently transported into the fermentation tanks by gravity. This method ensures that the grapes are handled as gently as possible, contributing to the exceptional quality of the final product. Fermentation and maceration last between 25 and 30 days and take place in temperature-controlled steel tanks at temperatures between 28 and 30 °C. This controlled environment makes it possible to extract aromas and colour from the grapes to optimum effect. The young wine is then transferred for malolactic fermentation into French oak barriques, 50% of which are new. These barrels give the wine its complex aromas and soft texture. The combination of new and used oak barrels ensures that the wine is not dominated by the wood notes but instead achieves a harmonious balance.
After ageing in barrel, the wine is bottled to mature further and refine its aromas before finally going on sale. This bottle-ageing phase allows the wine to develop its complexity and depth to the full, so that it offers a complete and pleasurable wine experience.
