Maturation	The wine is crafted with meticulous care, avoiding the use of pumps. Instead, whole berries are gently transferred to fermentation tanks using gravity. This method ensures the grapes are handled as gently as possible, contributing to the exceptional quality of the final product. Fermentation and maceration last between 25 and 30 days in temperature-controlled stainless steel tanks at 28-30°C. This controlled environment allows for optimal extraction of aromas and color from the grapes. The young wine is then transferred to French oak barriques for malolactic fermentation, with 50% of the barrels being new. These barrels impart complex aromas and a smooth texture to the wine. The combination of new and used oak ensures the wine achieves a harmonious balance, without being dominated by woody notes. After barrel aging, the wine is bottled for further maturation and refinement of its aromas before being released for sale. This bottle aging allows the wine to fully develop its complexity and depth, offering a complete and enjoyable wine experience.

The best way to store the wines is in a cool, dark place, horizontally. When storing, the temperature should not exceed 16 degrees.

How long can I store the wines?

How should the wines be served?

Sparkling wines should be served between 6-8°C, white wines between 12-14°C, and red wines between 16-18°C. Allow them to breathe a little after uncorking.
