MaturationAfter harvesting, the white grapes are immediately pressed to separate the juice, known as the must, from the skins. The must is then clarified to remove any impurities. Fermentation typically takes place in stainless steel tanks at controlled temperatures to preserve the fresh and fruity aromas. Sometimes, malolactic fermentation is also carried out to soften the acidity and make the wine rounder, but this is less common. After fermentation, the young wine can be stored on its fine lees to give it more body and complexity. This phase can last from a few weeks to months. Finally, the wine is filtered, possibly stabilized, and bottled. The entire process aims to preserve and highlight the fresh and typical aromas of a white wine.
