The vinification process begins with the selection of the finest grapes, carefully harvested in early September. The pressing of the must exemplifies technical sophistication: the grapes are gently pressed from above and below to extract the valuable aromas and the full potential of the fruit. The resulting must is carefully dissolved in amphora before fermentation to prepare it for further processing. The subsequent maceration is unique, lending the wine its remarkable depth: the must remains in amphora for three months, developing its complex structure and harmonious variety of aromas. This phase is complemented by spontaneous malolactic fermentation, which gives the wine a soft, velvety texture and racy elegance. The aging process is equally careful and deliberate. First, the wine matures in amphora and then in fine-pored acacia wood for a total of ten months. This patient refinement gives it its distinctive notes and the noble complexity that delights connoisseurs. After racking, the wine undergoes a light filtration to preserve its clear aromas. A resting period in the bottle follows to complete the final touches before the wine finally reaches the market. This completed maturation process ensures that every drop unfolds its highest quality and exquisite taste.
