Maturation

The Prestige cuvée is fermented and aged in temperature-controlled stainless steel tanks to preserve maximum freshness, precision, and clear fruit flavors. The cuvée is then bottled for secondary fermentation and aged on the lees for at least three years. This extended aging on the lees imparts delicate autolysis notes such as brioche and toasted nuts, along with greater creaminess and length, while remaining stylistically straightforward and crisp. The dosage is kept restrained so that the tension, minerality, and precise mouthfeel remain in the foreground.

The aroma is crisp and precise: lemon zest, green pear, and white peach, along with chalk, wet stone, and a hint of iodine. As it opens up, notes of brioche, toasted hazelnut, and subtle yeast spices emerge; it remains consistently lean, never broad, but rather razor-sharp in focus. Everything feels cool, clear, and very mineral, with citrusy freshness and a slightly salty undertone. An invigorating, exciting opening that combines elegance and energy.

Taste

On the palate, it feels cool and crystal-clear, with salty-mineral notes and a razor-sharp profile. The effervescence is as fine as dust and supports a powerful, compact core. Juicy, taut acidity gives the wine its structure, underpinned by a chalky, limestone-like texture that lends length and grip. The finish is consistently dry, very long, with delicate grapefruit bitterness, lemon zest, and the tart note of almond skin. Precision taken to the extreme.

Serving suggestion

Serve the champagne well chilled at 8–10°C. It’s best to use a tulip or white wine glass to allow the brioche, nutty, and chalky notes to unfold. Open the bottle slowly, without a pop, and pour in two stages: first a little, let the foam settle, then top it off. Ideal as an aperitif or with a meal. Pairs well with oysters, scallops, white fish, poultry, Comté cheese, or good potato chips.
