Maturation

The 2018 vintage, enhanced with 41 percent reserve wine (from 2015 to 2017): this adds body without sacrificing freshness. Following bottling in 2019, the wine undergoes a clear, precise aging process: cuvée vinification, seven months of yeast aging in tanks to develop creaminess and subtle effervescence, without any hint of wood or artificial enhancement. Followed by five years of cellar aging—this isn’t cosmetic, it’s about building texture. Time shapes the mousse, binds the acidity, rounds out the edges, and shifts the aromas of citrus and stone fruit toward brioche and nuts. Premier Cru: taut, serious, and ready to drink.

The nose reveals wild strawberry, raspberry, and sour cherry, clear and fresh. These are complemented by red currant and a subtle hint of lingonberry. Citrus zest evokes lemon and grapefruit, accompanied by brioche and lightly toasted hazelnut. In the background lie chalky minerality, a hint of salt, and delicate herbal notes. Overall, the aroma profile is bright, red-fruity, nutty, and subtly yeasty with a cool, stony note.

Taste

On the palate, it is crisp and precise with a fine, creamy effervescence. Juicy red berries (redcurrant, raspberry) meet citrus zest and a hint of blood orange. The acidity is lively yet well-integrated, providing a lively edge and freshness. This is complemented by a subtle note of brioche and a touch of chalkiness/minerality. The finish is dry, salty-mineral, and long, with citrus clarity and delicate spice.

Serving suggestion

This rosé is a real crowd-pleaser: served chilled, it has a crisp effervescence that immediately makes you want another sip. Serve it in a large glass instead of a narrow flute, and it reveals berry fruit, citrus freshness, a hint of brioche, and a dry, salty finish. Perfect as an aperitif, with veal or chicken, with grilled shrimp and lime, as well as with strawberry or raspberry desserts. Do not serve too sweet.
