The ageing of this wine is a precise and well thought-out process that aims to maximize the complexity and depth of the wine. Fermentation takes place in two different ways to give the final product different characteristics. Half of the wine is fermented in French oak barrels. This method brings rich, velvety textures and additional flavors such as vanilla and subtle toasted aromas to the wine. French oak is known for its fine-grained structure and lends elegance without influencing the wine too much. The other 50% is fermented in amphorae. Amphorae are traditional vessels made of materials such as clay, which allow the wine to mature without the influence of wood. This method allows the original character and terroir of the grapes to be expressed more strongly, as no additional aromas are added. The wine remains on the lees (sur lie) for 7 months, which promotes aromas of yeast and a creamy texture, as well as providing increased complexity and structure. This process is followed by 12 months of bottle ageing. This resting phase is crucial as it gives the wine time to develop further and harmoniously combine the different components, ultimately resulting in a concentrated and balanced aroma.
Overall, this careful ageing produces a wine that impresses with its depth, elegance and the harmonious fusion of oak and amphora influences.
