MaturationThe production of this wine is a precise and meticulous process aimed at maximizing its complexity and depth. Fermentation takes place in two distinct ways to impart different characteristics to the final product. Half of the wine is fermented in French oak barrels. This method contributes rich, velvety textures and additional aromas such as vanilla and subtle toasty notes. French oak is known for its fine-grained structure, adding elegance without overpowering the wine. The other 50% of the % is fermented in amphorae. Amphorae are traditional vessels made of materials such as clay, allowing the wine to mature without the influence of wood. This method allows the original character and terroir of the grapes to be more fully expressed, as no additional aromas are introduced. The wine then spends seven months on the lees (sur lie), which promotes yeasty aromas and a creamy texture, as well as increased complexity and structure. This process is followed by 12 months of bottle aging. This resting phase is crucial, as it allows the wine time to develop further and for the various components to blend harmoniously, ultimately resulting in a concentrated and balanced aroma. Overall, this careful aging process produces a wine that impresses with its depth, elegance, and the harmonious fusion of oak and amphora influences.
