MaturationDuring the wine's production, careful attention is paid to optimally processing the harvested grapes. A portion of the grapes, around 15-20%, is dried before vinification. This process takes approximately ten days and occurs in a special cellar room. After drying, these grapes are treated and vinified separately. In the wine cellar, the must ferments in stainless steel tanks. A controlled temperature is maintained, and a maceration fermentation of 10 days is carried out. After the malolactic fermentation is complete, the wine is aged on the fine lees in stainless steel tanks for 5 months. This method allows for further development and maturation of the wine. Finally, an additional aging period takes place in the bottle to optimally refine the wine.
