Maturation	This wine is made from a field blend of 30 different grape varieties. The vineyard is carefully harvested in several passes, with each batch selected according to its ripeness. The grapes are processed by hand to express the special characteristics of each variety and the terroir. The wine then matures for about 24 months in used wood and is stirred weekly to ensure even development. Before bottling, the wine is lightly clarified but not filtered. The different batches are then blended to reflect the unique character of the vineyard. The wine is then stored in stainless steel tanks for another 3-4 months before aging in the bottle for at least 12 months under optimal conditions.

The best way to store the wines is in a cool, dark place, horizontally. When storing, the temperature should not exceed 16 degrees.

Sparkling wines should be served between 6-8°C, white wines between 12-14°C, and red wines between 16-18°C. Allow them to breathe a little after uncorking.
