MaturationFollowing a thorough quality control of the grapes, a 20-day maceration takes place at controlled temperatures between 28 and 30°C. During this time, gentle extraction and regular pumping over ensure that color, aromas and tannins are optimally extracted from the grape skins. After maceration, the wine matures for 12 months in new French barriques and tonneaux. This careful maturation gives the wine a distinctive structure, fine roasted aromas and a remarkably high quality. This process represents a significant innovation in the wine's aging process and contributes significantly to its complexity and excellence.

ScentOn first approaching the glass, an inviting bouquet unfolds, reminiscent of juicy dark cherries just picked from the tree. The sweetness of the cherries mingles with the subtle aromas of lightly sun-dried tomatoes, which add an earthy and slightly savoury note. In the background, spicy nuances gradually emerge, suggesting freshly ground black pepper, a hint of tobacco and perhaps even a touch of gently roasted coriander seed. These spicy aspects give the bouquet a fascinating depth and layers of complexity that you return to again and again.
As the bouquet continues to develop, it also reveals a subtle trace of fine wood, perhaps a delicate hint of cedar or even a suggestion of sandalwood, which harmoniously rounds out the aromatic profile and brings an inviting warmth.
TasteOn the palate the wine is full-bodied, its structure carried by a dense tannic framework that gives it a remarkable presence and complexity. From the very first sip it reveals an intense aroma of ripe, dark berry fruit – blackberries, blackcurrants, perhaps also a hint of plum. These fruit notes give the wine a deep fullness and round out its sensual character.
As the tasting unfolds, the wine develops considerable drive, an expressiveness that is further reinforced by the dense tannins. These structuring elements create a solid foundation that the wine retains throughout. The finish is marked by a certain rawness – a wildness that is not perceived as disturbing but rather underlines its authenticity and vibrancy. It shows that the wine still carries youthful traits and may benefit from a little further ageing.
All in all, the wine can be described as powerful and expressive, with a fullness and depth that make it a real experience for the palate.
Serving suggestionThis outstanding wine harmonises superbly with classic, robust dishes. With cinghiale alla cacciatore – wild boar, hunter's style – the wine perfectly complements the earthy aromas with its rich notes of dark cherry and undertones of tomato, resulting in a full, sensual taste experience. With Tuscan sausage, the wine's spicy aromas come to the fore, excellently underlining the seasoning and intensity of the sausage. Every slice is taken to a new flavour level by the velvety wine.
Not least, it pairs wonderfully with Tuscan cheeses such as Pecorino or Taleggio. The salty, creamy texture of these cheeses is fully rounded out by the velvety, intense aromas of the wine, creating a harmonious flavour composition.
