Maturation	The grapes are hand-picked, with only the best berries being selected. This selection forms the basis for a wine of outstanding quality. This is followed by a medium-length maceration on the skins, which gives the wine a balanced amount of color, flavor and tannin structure. This phase is crucial for developing complexity and depth. Alcoholic fermentation takes place in natural cement tanks at a controlled temperature. These tanks provide a neutral environment that preserves the purity of the fruit, and the temperature control ensures that the process is even and gentle. This is followed by malolactic fermentation, which helps the wine develop a smoother texture by converting the acid. The wine then rests for at least 12 months in second- and third-use barriques, which gives it subtle wood aromas and an elegant structure without overpowering it. Before bottling, the wine matures for a further 12 months in the bottle. Vallino Costa Toscana Rosso IGT

Vallino is a hand-picked red wine that is vinified with great care from the best grapes. After a medium-length maceration, it develops its complex color and tannin structure. Fermentation in natural cement tanks preserves the freshness of the fruit, while the 12-month maturation in second and third passage barriques adds subtle wood aromas. The bouquet combines ripe cherries, raspberries and blackberries with a refreshing note of blood orange and a fine earthiness. On the palate, Vallino is lively and harmonious, with a rich fruitiness and an impressive, balanced finish. Ideal with red meat and mature cheese.

At the end of the 19th century, the Nuti family acquired the “La Regola” estate in Riparbella to grow wine and olives. The house's cellar was converted into the first wine cellar called “La Regola” and produced up to 30 basket bottles of wine. In 1990, Luca Nuti, the eldest son, decided to found a winery to further expand cultivation and market the bottles. He places great emphasis on natural and high-quality wines. Flavio Nuti, who has an MBA in business administration and expertise in the wine sector, has been working with his brother Luca since 2000 in the management, marketing, and trade relations of the winery. He has transformed the new cellar into a space for art and culture, collaborating with the artist Stefano Tonelli in the project “A REGOLA D’ARTE”. Since 2018, Valentino, from the fifth generation, has also been part of the company and works as a winemaker.
