Maturation	The development of this wine blend, following the manual second method in October, is characterized by a careful and precise approach that combines both traditional and innovative techniques to create an exceptional wine. The process begins with surface pressing, a delicate method where the grapes are gently pressed to extract the valuable aromas and pure juice. This step is followed by minimal pre-fermentation maceration, which helps to preserve the desired aromas and texture of the wine. Maceration, an essential part of the winemaking process, is carried out with particular precision in this technique: the wine blend is macerated every three months with specially selected yeast. This targeted and regular maceration supports the development of complex aromas and a harmonious wine structure. The malolactic fermentation, a process in which the harsh malic acid is converted into softer lactic acid, also takes place. This step gives the wine a creamier texture and a gentler acid structure, contributing to the overall complexity of the final product. A special feature of this development is the aging of the wine for over 18 months in amphorae. Amphorae, traditional clay vessels, allow for subtle micro-oxidation, which rounds off the wine and further refines its aromas. After amphora aging, the wine is bottled and continues to mature in bottles to achieve its final balance and depth before being released as a commercial brand. Before bottling, the wine is lightly filtered to remove fine suspended particles and ensure a clear, pure liquid, without compromising the complexity and characteristics of the wine. The best way to store the wines is in a cool, dark place, horizontally. When storing, the temperature should not exceed 16 degrees.

Sparkling wines should be served between 6-8°C, white wines between 12-14°C, and red wines between 16-18°C. Allow them to breathe a little after uncorking.
