MaturationThe grapes are lovingly hand-picked to ensure that only the best and ripest grapes make their way into the wine. This process usually takes place in September, when the grapes are optimally ripe. After the harvest, the grapes are gently pressed to obtain the fine must. Only a minimal amount of sulphites is added in order to preserve the purity of the must. Red fermentation then takes place in steel tanks, allowing a controlled and even fermentation. Maceration takes place together with the grape skins, with several months of contact between must and skins. This process lasts about 2 months and allows the wine to extract the desired colour and flavour compounds from the skins. This important phase occurs spontaneously. During malolactic fermentation, lactic acid bacteria convert the sharp malic acid into the softer lactic acid, giving the wine a rounder and more harmonious flavour profile. After fermentation, the wine is aged in amphorae, which lend it subtle, earthy and mineral notes. The wine then matures further in steel tanks, where it continues to develop and refine. In total, this ageing phase lasts 10 months.
After ageing in the amphorae and steel tanks, the wine is bottled and then rests further in the bottle. This additional time in the bottle ensures that the wine develops its full aromatic potential and complexity before release.
Before the final bottling, the wine is lightly filtered to remove any impurities while preserving the natural aromas and structures. This comprehensive and carefully monitored process results in a beautiful and complex wine that reflects the dedication and craftsmanship of the winemaker.
