Winemaking focuses on selecting and processing grapes to achieve the highest quality. It begins with careful handpicking, ensuring only the best grapes are used. These are gently pressed to preserve their natural aromas, and fermentation occurs spontaneously with natural yeasts. The grapes remain in contact with their skins to optimally extract color and tannins. The aging process takes place in clay amphorae, which allow micro-oxidation and refine the wine's aromas without adding any flavor of their own. The wine matures here for about ten months, developing complexity and elegance as the tannins gently soften and the acidity integrates harmoniously. The wine is bottled without filtration to maintain its texture and authentic aromas. A targeted, minimal use of sulfites ensures stability without distorting the flavor. This process creates a wine with complex flavor profiles and fine elegance, reflecting both the terroir and the craftsmanship of the winemaker.
