MaturationThe grapes are harvested by hand, with only the best fruits being carefully selected. This dedication to quality is already evident in the first phase, when the grapes are gently pressed and transferred to stainless steel tanks. This is where the fermentation process begins, which is monitored with the utmost precision and care. After the first fermentation, the wine undergoes a fascinating transformation using the "Ripasso" method. This ancient, artisanal approach gives the wine additional depth and complexity. By re-fermenting the Valpolicella on the skins of Amarone, a seemingly endless interplay of aromas unfolds, reminiscent of ripe fruit, spices, and subtle wood tones. The wine is aged in both small barriques and large oak barrels, allowing it to develop harmoniously. During the first few months in the barriques, the wine acquires delicate wood notes that blend elegantly with the fruity bouquet. It then rests in the large barrels, where it has time to refine its structure and integrate the aromas. This careful aging ensures that the wine ultimately achieves perfect harmony. The structure is powerful, the tannins are polished, and the finish leaves a long, lasting impression. Every sip reveals the passion and craftsmanship that went into making this wine.

Aromas of fermenting plums and juicy Amarena cherries are to the fore, lending the bouquet a seductive fruitiness. These fresh, lively notes are complemented by subtle hints of milk chocolate, which give the bouquet a pleasant sweetness and depth. The chocolate nuances harmonise wonderfully with the fruit, creating a multi-layered interplay of aromas.
On the finish, however, a certain lack of cleanliness shows itself, which slightly diminishes the impression. This mild blurriness could indicate incomplete ageing or imprecise vinification. Despite this small flaw, the wine remains fascinating as a whole and offers an appealing flavour profile that invites both enjoyment and reflection. The wine invites further exploration, even if, on the finish, it does not quite achieve the clarity and precision one might wish for.

Serving suggestionThe Valpolicella Ripasso is a truly fascinating wine that immediately appeals to the senses with its complex aromas and lively acidity. To enjoy this special wine in all its splendour, we recommend serving it lightly cooled at around 14 to 16 degrees Celsius. A rounded red wine glass will show off the multi-layered aromas to best effect and allow you to savour the wine's seductive nose to the full.
