From the cool northern “Dalivard” vineyard in Celles-sur-Ource, planted on Kimmeridgian clay-limestone, comes a Chardonnay made from old vines that has not been pampered but rather raised with care: fermented and aged in oak barrels. The wood does not intrude; it shapes the contours, imparting a subtle creaminess, nutty warmth, and a delicate, toasty nuance without overshadowing the chalky vein. The moderate ripeness (10.6% potential) keeps the tension high: taut, salty, precise, with a creamy core. Nobility as an attitude, not as a fragrance.

Scent

Ripe Williams pear and yellow apple open the bouquet, accented by a delicate hint of Amalfi lemon. These are joined by delicate notes of white flowers and a touch of acacia honey. In the background, hints of brioche and fresh butter braided bread shimmer, accompanied by subtle yeast notes, roasted hazelnut, and a hint of almond brittle. A chalky minerality and the impression of wet stone lend depth, while a nuance of smoky toast elegantly rounds it all off. The finish remains crisp and invigorating: salty citrus freshness, carried by a delicate, marzipan-like echo.

Taste

On the palate, it is lively and fresh, yet surprisingly full-bodied in the mid-palate. Ripe mirabelle plums and yellow stone fruit juice lead the way, precise and juicy, without ever becoming heavy. Behind this emerges a subtle brioche note, slightly buttery but underpinned by a clear tension. Caramel does not come across as sweet, but rather as a delicate, toasted note that lends the wine warmth and depth. The texture is creamy, yet permeated by a taut, salty edge. The finish is long, powerful, and very persistent, with lingering fruit and elegant spice.

Serving suggestion

Don’t pair it with a “light” dish—give it something to really stand out against. A cream-braised chicken with morels: creamy, earthy, fragrant, and the wine draws a clear, salty line through it, lifting the poultry, extending the sauce, making it more precise. And then, boldly, Tarte Tatin: warm, caramelized, apples melting in the mouth—the wine stays alert, holds its own, carries the dish.
