MaturationThe development of this wine is a carefully considered process that relies on traditional and precise methods. It begins with fermentation in conical wooden vats, a decision that serves not only aesthetic but also practical purposes. The conical shape of the vats allows for a uniform mixing of the mash, which is supported by repeated pumping-over processes. This procedure ensures that the must can optimally combine with the aromas from the skin, ultimately contributing to a more intense flavor development. Once fermentation is complete, the young wine is separated from the skins to preserve its purity and clarity. This is done through a process of racking, in which the wine is gently separated from the solids. After this phase, the wine rests for six months in a specially designed tank. This resting period is essential to allow the wine to further refine its structure and integrate its aromas. The next step in this meticulously planned development is bottling. The wine continues to mature in the bottle for at least two years, which not only helps it achieve even greater aromatic complexity but also gives it a smoother texture. Only after this extended bottle maturation is the wine ready to go on sale, where it then delights ambitious connoisseurs with its mature aromas and structure.

ScentThe wine unfolds a distinctive and complex bouquet that immediately captivates and piques curiosity. Initially, an intense, spicy scent rises to the nose, reminiscent of freshly ground green pepper. This peppery note is pronounced and gives the wine a certain sharpness and vibrancy, immediately attracting attention and making one curious about the first sip. In addition to this dominant peppery spice, subtle nuances of earthy aromas are revealed upon closer inspection. These are reminiscent of fresh, damp forest floor or even the scent of freshly plowed earth after a summer rain. These earthy accents give the wine a depth and complexity that make it appear grounded and powerful. But the bouquet offers even more. Behind the earthy and spicy main components, delicate hints of fresh herbs shimmer through, conveying the impression of a lively freshness. Notes of rosemary or thyme may be discernible, adding a Mediterranean lightness and elegance to the olfactory profile. Overall, the scent of this wine impressively combines spice, earthiness, and freshness. This multi-layered aroma makes the wine a fascinating experience for the senses, especially for the inclined wine connoisseur who knows how to appreciate the variety and depth of the bouquet.
TasteThe wine impresses with a rich yet refined flavour profile that immediately reveals its versatility and class. At first it presents itself on the tongue with a well-judged balance and a velvety texture that feels pleasantly poised and harmonious.
The elegant impression continues in the interplay of delicate fruit aromas with a hint of ripe berries. These fruit notes are subtle, underlined by a fine spiciness that lends the wine an intriguing depth. This spiciness reveals itself in particular through nuances reminiscent of peppery and slightly vegetal accents, giving the wine a dynamic and lively structure. On the palate, the wine is clear and dry, this dryness giving the intense flavour nuances room to unfold. The finish is long and leaves a clean, pleasant impression that once again underlines the balance and the fine texture. A special feature of this wine is its capacity to age. This cellaring potential allows the aromas to develop further over time, so that the wine gains in complexity and depth. The carefully balanced structure and the present yet well-integrated tannins make it an excellent candidate for longer-term storage, in which it can unfold its full potential.
Serving suggestionThis wine is an excellent choice as a stylish aperitif, stimulating the taste buds and setting the stage for the culinary experience to follow. Its versatility allows it to harmonize with a variety of dishes. It is a particularly good accompaniment to roasted meats such as beef or lamb, as its structure and spice withstand and complement the intense flavors of the meat. It also unfolds its full potential with chicken dishes, emphasizing the flavors of the poultry without overpowering them. For a vegetarian option, it pairs well with hearty vegetable soups, where its spice and elegance offer a perfect complement to the fresh aromas of vegetables. The subtle fruit notes harmonize well with the complex aromas of a well-seasoned soup. Finally, the wine is ideal for traditional dishes, where its subtle depth and balance emphasize the various flavor notes without being obtrusive. This wine wonderfully complements classic recipes, making every dish a special culinary experience.
