Immediately after the harvest, it is crucial to process the grapes promptly. This step involves destemming and pressing the grapes, which is done simultaneously by a specially designed machine. This immediate processing guarantees that the freshness and intensity of the aromas are preserved without alteration. The wine is made from Nebbiolo grapes, a variety known for its complex and multi-layered aromas. The special character of this wine requires it to mature for at least three years. Of this time, the wine spends at least 18 months in oak barrels. This aging in wooden barrels helps to refine the structure and taste of the wine, giving it depth and complexity. The resulting wine is remarkably long-lasting. Thanks to its intact structure, it can continue to develop over many years, with its aromas and flavors maturing and refining. The best way to store the wines is in a cool, dark place, horizontally. When storing, the temperature should not exceed 16 degrees.

How long can I store the wines?

How should the wines be served?

Sparkling wines should be served between 6-8°C, white wines between 12-14°C, and red wines between 16-18°C. Allow them to breathe a little after uncorking.
