Maturation

Amarone is a truly fascinating wine, whose story of origin already tantalizes the senses. The grapes are harvested by hand in the golden days of September and then left to wither in special storage rooms. This process concentrates the aromas and causes the grapes to lose up to 40% of their weight. The harvest is followed by a maceration period of around 45 days, during which the grapes are gently processed. Fermentation takes place at mild temperatures and ensures a harmonious balance of fruit and elegance. The wine then matures for around 24 months in large Slovenian oak barrels, where it develops its complex aromas. Finally, after ageing in the bottle, the Amarone shines in all its glory: ripe cherries, dried fruit and fine spices combine to create a majestic taste experience.
