Maturation

The vinification process begins with the alcoholic fermentation of the wine in stainless steel tanks. These tanks offer precise temperature control, which helps to preserve the aromas and promote the quality of the wine. During this fermentation phase, the wine is pumped over daily to ensure an even distribution of the yeasts and other ingredients, which increases the complexity. A special component of this process is the Délestage, also known as Rack and Return. In this process, the wine is completely drained from the tank in order to aerate the grape mash and enhance the extraction of tannins and aromas. This technique improves the structure and promotes a rich variety of aromas. After fermentation, the wine matures for 24 months in oak barrels. This maturation gives the wine additional aromas, such as vanilla and spices, and ensures a harmonious tannin structure. The wine is then stored in the bottle for a further 6 months. This bottle aging further integrates the aromas and rounds off the taste. The result is a wine that offers a balanced combination of complexity and finesse.
