The wine is matured in French oak barrels with a capacity of 225 liters. These barriques not only offer the wine an ideal environment for ageing, but also the opportunity to develop subtle aromas and an elegant structure. Once fermentation is complete, a careful decision is made as to which proportion of the wine should mature in new barrels and which in used barrels. This decision is based on a precise health and analytical assessment of the wine to ensure that its natural characteristics are brought out to the best possible effect. The length of time the wine spends in the oak barrels is not fixed, but is individually adapted to the structure of the wine as it matures. This tailor-made approach allows each wine to reach its optimum maturity and depth of flavor. According to current production regulations, the ageing period in wood is at least 18 to 24 months. During this time, the wine can develop its complexity and full expression before it is bottled to delight lovers of fine wines.
